Roasted Pimento Peppers are also know as seasoning peppers. This pepper is not that well known, but roasted pimento seasoning acts like a pimento seasoning pepper and it is a very popular pepper in Caribbean cooking as it adds flavour and colour in abundance, as to lift your meals. If you make your own green seasoning then you can add this for a flavourful addition. This can also be added to dishes like salt fish or stew chicken. When cooking, pimento seasoning is used in many different ways. It is the essential ingredient in some of the most popular Caribbean dishes such as liver and onions, pepper pot stew, goat water/pepper pot soup, salt fish fritters etc. We also have Chandon Beni & Coconut Chutney sauces. The pimento pepper turns from light green to dark red or orange red. The elongated peppers can get over 3 inches in length and about 1/2 inch in diameter. It has the flavor of extremely hot peppers but almost no heat!
