Ingredients
1.5kg chicken pieces (thighs and drumsticks work best — bone-in, skin-on)
4 tablespoons Jamaican Jerk Seasoning (Caribbean Sydney)
2 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons olive oil
2 tablespoons apple cider vinegar (or lime juice)
4 cloves garlic, minced
1 teaspoon fresh thyme leaves (or ½ tsp dried)
1 teaspoon ground allspice (pimento) (Caribbean Sydney)
½ teaspoon cinnamon
Salt and black pepper to taste
1 Ting Caribbean Grapefruit Soda (to serve — optional but highly recommended)
Directions
- Combine jerk seasoning, soy sauce, brown sugar, olive oil, vinegar, garlic, thyme, allspice, and cinnamon in a bowl and mix into a thick marinade paste.
- Score the chicken pieces with a sharp knife — cut 2–3 deep slashes into each piece through to the bone. This allows the marinade to penetrate deeply.
- Coat the chicken thoroughly in the marinade, pushing it into the cuts. Cover and refrigerate for a minimum of 4 hours — overnight is ideal and makes a significant difference to flavour.
- Remove chicken from the fridge 30 minutes before cooking to come to room temperature.
- BBQ METHOD: Preheat your BBQ to medium-high (around 200°C). Cook chicken over indirect heat for 35–40 minutes, turning occasionally, then move to direct heat for the last 5–10 minutes to char the skin.
- OVEN METHOD: Preheat oven to 200°C fan-forced. Place chicken on a wire rack over a lined baking tray. Roast for 40–45 minutes until cooked through and the skin is dark and slightly charred. Finish under the grill for 3–5 minutes for extra char.
- Rest the chicken for 5 minutes before serving.
