If you’ve ever eaten at a Caribbean household and wondered why their chicken tastes completely different from yours — even when you follow the same recipe — green seasoning is the answer. It’s the base marinade that goes on everything: chicken before the grill, fish before the fry, meat before the oven. Every Caribbean cook has their version; Chief Brand’s bottled formula captures the Trinidadian interpretation — a blend of garlic, chives, celery, and culantro (shadow beni) that’s been a staple in T&T kitchens since the brand launched in 1957.

Green seasoning is not a sauce you use at the table. It’s an overnight marinade ingredient, a flavour foundation, the layer of seasoning that no amount of table-side pepper sauce can replace once it’s been missed. In Trinidad and across the Caribbean, it’s often called the “DNA of the cuisine” — because without it, the food just doesn’t taste right. The herbs penetrate the protein during marination, creating a depth that synthetic seasonings and stock powders simply can’t replicate.

Chief’s 300ml bottle is the pantry-sized format — enough for dozens of marinades. At $12.50 it’s exceptional value for the cooking transformation it delivers. Keep refrigerated after opening and it’ll last several months of regular use. If you’ve never cooked Caribbean food before, this is one of the two products (along with a good curry powder or jerk seasoning) that will make the biggest difference to your results.

How to Use

  1. Chicken Marinade: Coat chicken pieces with 2–3 tbsp of green seasoning per kilogram. Add garlic, onion, scotch bonnet if desired. Marinate overnight minimum. Then grill, fry, stew, or bake.
  2. Fish & Seafood: Green seasoning works beautifully on fish — a 1-hour marinade is sufficient. Rinse lightly before frying to prevent burning.
  3. Pork: Rub generously into pork cuts before roasting or stewing. The herbs caramelise beautifully under high heat.
  4. Soups & Stews: Add 1–2 tbsp directly to the pot as a flavour base, alongside onion and garlic.
  5. Vegetables: Toss roasting vegetables in green seasoning and olive oil before the oven.

Serving Suggestions

  • Trinidadian Stewed Chicken: Marinate in Chief Green Seasoning overnight, caramelise with brown sugar, then slow-cook until tender. Serve with rice and pepper sauce.
  • BBQ Chicken: Green seasoning is the ultimate Australian BBQ upgrade — marinate chicken thighs overnight, grill on high heat. The herbs char beautifully.
  • Want the Jamaican version? The Walkerswood Green Seasoning uses a different herb profile with scotch bonnet and pimento — try both and find your favourite.
