Doubles is the undisputed king of Trinidadian street food — and arguably one of the greatest street foods on the planet. Every morning in Trinidad, vendors set up their carts and thousands of people line up for their doubles: two pieces of soft, pillowy fried flatbread (bara) topped with curried chickpeas (channa) and finished with a combination of chutneys including tamarind, pepper sauce, cucumber, and coconut. The whole thing costs less than a dollar in Trinidad and takes about 30 seconds to eat standing at the roadside.

What Is Bara?

Bara is the soft, slightly puffed fried flatbread that forms the “bun” in doubles. Made from a simple yeasted flour dough seasoned with turmeric and spices, bara is fried until it puffs up and turns golden — light, airy, and slightly chewy. How to Make Doubles with Chief Bara Mix

  1. Pour the contents of the 300g pack into a bowl.
  2. Add water gradually — a little at a time — and mix until you get a soft, slightly sticky dough. Don’t rush this step; the right hydration is key.
  3. Cover the dough and let it rest to proof for 30–45 minutes.
  4. Heat vegetable oil in a deep pan to 180°C.
  5. Flatten small balls of dough into thin rounds (about 10cm diameter).
  6. Fry each bara for 1–2 minutes per side until puffed and golden.
  7. Top with curried chickpeas (channa) and your favourite chutneys.
